Join Kirstin as she shows you how to make this Quick and Delicious Healthy Halloween treat! Jam packed with nutrition, but so yummy you wont be able to stop eating it. Cinnamon and Goji berries add a sweet twist to the traditional pumpkin seeds as well as some unique healing properties.
1 1/2 cups fresh pumpkin seeds
1-2 tbs. olive oil
1 tbs. fresh ground cinnimon
1-2 tbs. raw sugar
pinch of celtic sea salt
dash of ground nutmeg
1/2 cup of goji berries (mix in last 3 min)
*Note: Amount may vary depending on how many seeds you get from your pumpkin (please adjust accordingly)
Step 1: Preheat oven to 350 degrees
Step 2: In a large bowl combine pumpkin seeds, olive oil, cinnamon sugar, salt, & nutmeg (make sure all the seeds are coated)
Step 3: On a baking sheet spread the coated pumpkin seeds out evenly and put in preheated oven for 25-30 minutes, stirring every 5 minutes so that they don't over brown on the top.
Step 4: Once the seeds are golden brown, stir in the goji berries and stick back in the oven for about 2 minutes. *Watch carefully... the goji berries brown very quickly!
