2 cups organic mixed greens
1 cup organic arugula
1/2 Bell Pepper
1/2 cucumber (persion is my favorite)
2 celery stalks
10 sugar snap pee’s
1 cup cooked forbidden black rice
Chop the bell pepper, apple, celery,cucumber, and the ends off the sugar snap pee’s and set aside. Next place the cooked black rice in a small pan with 1 tbls. of your favorite dressing and 1 tbls. water. Turn the heat to medium low and let simmer. Next place half of the mixed greens and half of the arugula on a plate, place half of the chopped veggies on each plate sprinkling more around the edges while leaving an empty space in the center. Once the Forbidden black rice in warm place half in the center of each salad. Place an additional 1 tbls. of dressing on each salad and serve.
