Warm Mung Bean, Pea and Arugula Salad

Good for:
Brunch Lunch Dinner Entree Salad

Key ingredients:
Arugula Bell Pepper Mung Beans Peas

Ingredients

3 cups organic arugula
1/2 cup sprouted peas
1/2 cup sugar snap peas
1/2 red 1/2 yellow bell pepper chopped
1 cup cooked mung beans

  • Arugula
  • Beets
  • Carrots

Instructions

Make a bed of the arugula on two plates, place the sugar snap peas around the edges of the plates, sprinkle the bell peppers decoratively in a circle, place the sprouted peas in the center of each plate and set aside. In a pan lightly saute the cooked mung beans with 2 tbls. of your favorite dressing and add the warm mung bean mixture to the top of each plate.
