3 cups of organic arugula
2 small beets lightly steamed (thinly sliced)
4-5 purple carrots (thinly sliced)
1 red or yellow bell pepper (chopped)
1 cup of cooked great northern beans
Step 1: Divide the arugula onto 2 separate plates, divide beets, purple carrots, bell pepper & sprinkle around the edges of each plate. In a pan on low-med heat warm up your cooked beans lightly saute with 2 tbs. of your favorite dressing, add to the center of each salad... Enjoy!
